Traditionally, Yakisoba uses wheat flour noodles, but using buckwheat noodles can lead to them breaking apart easily, resulting in a messy dish. Fresh ramen noodles are a fantastic alternative for achieving that delightful chewiness! Let’s make this flavorful Yakisoba, featuring plump shrimp, crisp vegetables, and a savory special sauce, together. I’ll guide you step-by-step, perfect even for beginners!

It’s that time of night, isn’t it? Especially the night before the weekend, when hunger pangs strike! I like to keep a few simple snacks handy and some frozen meals that can be quickly heated up. Today, I want to share a simple stir-fry recipe perfect for a late-night meal: Yakisoba! While traditional soba is made from buckwheat, Yakisoba typically uses wheat flour noodles. That’s why I’ll be using commercially available fresh ramen noodles to create this dish. If you try to stir-fry buckwheat noodles, they tend to break apart easily, making the final dish look messy. Shall we make this easy Yakisoba together?

First, let’s prepare the vegetables and seafood. Slice the onion into 0.5cm thick pieces. Trim about 1cm from the base of the oyster mushrooms and then separate the strands. Cut the lime into a quarter wedge for garnish later. I’m using pre-cleaned shrimp for convenience.

We’ll start by making the fried egg. Preheat a frying pan over high heat for 3 minutes. Add 1 Tbsp of olive oil, then crack the egg into the pan. Cook the egg to your desired level of doneness (runny or firm) and set it aside on a plate.

Now, let’s cook the ramen noodles. Pour about 600mL of water into a pot and bring it to a boil. Once boiling, add the fresh ramen noodles. If the package indicates a total cooking time of 5 minutes, only cook them for about 4 minutes. The key is to slightly undercook them, as they will continue to cook when stir-fried. This ensures they remain perfectly chewy in the final dish. Drain the cooked noodles in a colander and set them aside.

Now, let’s stir-fry everything. Preheat the same pan over high heat for 3 minutes. Add 1 Tbsp of butter and melt it. Add the sliced onions and stir-fry until they become translucent. Then, add the oyster mushrooms and shrimp, and continue to stir-fry. Pour in 1 Tbsp of cooking sake, 1.5 Tbsp of tsuyu, 1 tsp of minced garlic, and 1/3 tsp of black pepper. Stir well to combine everything.

Add the cooked ramen noodles to the pan with the stir-fried ingredients. Increase the heat to high and quickly stir-fry for about 1 minute. It’s important to stir-fry rapidly to ensure the noodles are evenly coated with the sauce.

Finally, let’s adjust the seasoning. If needed, add a little more tsuyu to reach your desired taste. Transfer the Yakisoba to a serving plate. Garnish with the prepared fried egg, fresh bean sprouts, and a lime wedge. Sprinkle with sesame seeds for a beautiful presentation. Your simple and delicious late-night Yakisoba is ready!
