Quick and Delicious Kimchi Beef Noodles using Leftover Galbitang Broth

Simple Kimchi Beef Noodle Soup

At my home, we tend to eat all the solid ingredients from soup dishes and leave a lot of broth behind. As expected, after making Galbitang (Korean beef short rib soup) this time, all the meat was eaten, but the broth remained! So, I decided to make Beef Noodle Soup (Uyeokmyeon) with it. Luckily, I had homemade Kalguksu noodles and some delicious braised beef (Jangjorim) on hand. All I needed to do was cook the noodles, and it would be a fantastic noodle dish! I then added a bit of my favorite kimchi as a topping, and voilà – a custom-made Uyeokmyeon was ready in no time! I happily devoured the entire bowl by myself, as if it were disappearing before my eyes. Enjoy this delicious Kimchi Uyeokmyeon made simply with Galbitang broth!

Main Ingredients

  • Galbitang broth
  • Kimchi
  • Egg
  • Jangjorim (braised beef)

Garnish & Seasoning

  • Toasted sesame seeds
  • Sesame oil
  • Green onion
  • A little bit of ripe kimchi (optional, for topping)

Cooking Instructions

Step 1

First, prepare the kimchi to be used as a topping. Using ripe kimchi will make it even more delicious. Chop the kimchi into bite-sized pieces. You can also chop it finely or shred it according to your preference.

Season the chopped kimchi lightly and mix well. Adding a drizzle of sesame oil and a sprinkle of sesame seeds will enhance the kimchi’s flavor and make it tastier. (Optional: If you like it spicy, you can add a pinch of gochugaru or sugar.)

Pour the prepared Galbitang broth into a pot and heat it until warm. Once the broth comes to a gentle boil, reduce the heat to low so the noodles can cook thoroughly.

Add the Kalguksu noodles to the boiling broth and cook according to the package instructions. It’s good to stir the noodles occasionally to prevent them from sticking together. Once the noodles are cooked to your liking, drain them and set aside.

Place the cooked noodles into a deep bowl first. Pour the warmed Galbitang broth generously over the noodles. Arrange the prepared Jangjorim neatly on top of the noodles. For an even more appealing dish, you can add a halved hard-boiled or soft-boiled egg as a garnish.

Finally, generously top with the seasoned kimchi, chopped green onions, and a light drizzle of sesame oil to finish. This Kimchi Uyeokmyeon is best enjoyed immediately while it’s hot. Enjoy your meal!
