Easy Janchi Guksu Recipe: Recreate Gimhae Daedong Halmae Guksu’s Deliciousness at Home!

Noodles and Toppings- 2 servings of Somyeon noodles (approx. 200g)
- Pickled radish (Danmuji), julienned (approx. 1/4 cup)
- 1/3 Zucchini, julienned
- Pinch of salt (for sautéing zucchini)
- Pinch of pepper (for sautéing zucchini)
Rich and Refreshing Dried Pollack Broth- 1 Dried pollack head (or 1/2 dried pollack)
- 1 sheet Dried kelp (approx. 10×10 cm)
- 10 Dried anchovies (for broth)
- 50g Radish, cut into large chunks
- 1 Tbsp Soy sauce for soup (for broth seasoning)
- Pinch of salt (for broth seasoning)
Flavor-Exploding Seasoning Sauce- 2 Tbsp Dried pollack broth
- 2 Tbsp Soy sauce (regular)
- 1 Tbsp Soy sauce for soup
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Plum extract (for sweetness and depth!)
- 1 Tbsp Minced garlic
- 1 Tbsp Minced green onion
- 1/2 Tbsp Sesame oil
- 1/2 Tbsp Toasted sesame seeds
- 1 Dried pollack head (or 1/2 dried pollack)

Cooking Instructions
Step 1
First, let’s prepare the toppings that are key to a delicious Janchi Guksu. Rinse the pickled radish and julienne it thinly and long. Wash the zucchini, remove the seeds, and similarly julienne it into long strips. Lightly oil a frying pan and add the julienned zucchini. Sauté briefly with a pinch of salt and pepper for seasoning. Be careful not to overcook to maintain a pleasant crunch. Tip: Don’t discard the kelp used for making the dried pollack broth! Rinse it clean, pat it dry, and julienne it finely to use as a topping for an even richer flavor.
Step 2
Now it’s time to cook the noodles. Add the somyeon noodles to a large pot of boiling water and cook for 3-4 minutes (refer to the package instructions, but adjust to your preference). Quickly rinse the cooked noodles under cold water to remove excess starch, then drain them thoroughly in a colander. Place the cooked noodles neatly in a warm serving bowl. Arrange the prepared toppings (pickled radish, zucchini, and julienned kelp) beautifully on top.
Step 3
Finally, pour a generous amount of the rich dried pollack broth over the noodles and toppings. Add the prepared seasoning sauce attractively on top, ready to be mixed in. Mix everything well with chopsticks and enjoy this warm, comforting Janchi Guksu. It’s a dish that rivals the famous Gimhae Daedong Halmae Guksu and is perfect for the whole family to enjoy!
