Cooking Instructions

Step 1

First, thinly slice the zucchini into half-moon shapes. Zucchini adds a wonderful savory depth to the broth, so it’s a key ingredient to include. Sautéing them before adding them as a topping will enhance their flavor.

Step 2

Let’s prepare the flavorful seasoning sauce. In a bowl, combine 4 Tbsp soy sauce, 1 Tbsp gochugaru, 1 Tbsp minced garlic, 2 Tbsp chopped chili, 1 Tbsp toasted sesame seeds, and 1 Tbsp sesame oil. Mix well. This sauce alone will elevate the taste of your Janchi-guksu.

Step 3

Now, it’s time to make the egg garnish. Crack 2 eggs into a bowl and whisk them thoroughly. Removing the chalazae (the white stringy bits) will help create a smoother, more visually appealing omelet.

Step 4

Lightly grease a non-stick pan over very low heat. Pour in the whisked egg mixture thinly to create a crepe. Cook over extremely low heat to prevent burning, flipping gently to cook both sides until a beautiful yellow omelet is formed. Let it cool slightly, then thinly julienne it.

Step 5

Let’s make the delicious broth. In a pot, add 1200ml of water (about 6 paper cups) along with the dried kelp and anchovies for broth. Once the water boils, remove the kelp immediately. Reduce the heat to medium-low and simmer for another 10 minutes to extract the anchovy flavor. After 10 minutes, remove all the anchovies and season the broth with 1 Tbsp Korean soup soy sauce. The result is a clear and deeply savory broth.

Step 6

Time to cook the noodles! Bring a large pot of water to a rolling boil. Add the 2 servings of noodles and cook according to the package instructions, typically 3-4 minutes. It’s important to stir the noodles gently occasionally to prevent them from sticking together. Once cooked, quickly rinse the noodles under cold water to remove excess starch and drain well.

Step 7

Place the cooked noodles into a serving bowl. Top with the prepared zucchini, julienned egg omelet, and the seasoning sauce. Pour in the warm broth, and your delicious Janchi-guksu is ready! Feel free to add kimchi or shredded cucumber for extra flavor.
