Today, I’m sharing a recipe for ‘Eggplant Pizza’ made with eggplant instead of flour. I didn’t used to like eggplant much, but ever since I started making this ‘Eggplant Pizza’, I’ve been eating it every day because it’s so incredibly delicious and captivating!
Ingredients
- 3 eggplants (choose medium-sized, firm ones)
- 2 bell peppers (use spicy peppers like jalapeños or regular ones based on your preference)
- 100g mozzarella cheese
- A handful of sliced black olives (adjust to taste)
- Olive oil, for drizzling
- Salt, to taste
- Black pepper, to taste
- 6-7 cherry tomatoes
- 2 tablespoons breadcrumbs
Cooking Instructions
Step 1
First, wash the eggplants thoroughly and remove the stems. Slice them lengthwise into approximately 0.5cm thick, uniform pieces. Line a baking sheet with parchment paper and arrange the sliced eggplants in a single layer without overlapping. This helps the toppings sit nicely later.
Step 2
Drizzle olive oil over the top of the eggplant slices and sprinkle with salt. Flip them over, drizzle olive oil on the other side, and season with black pepper. Bake in a preheated oven at 200°C (400°F) for about 20 minutes, or until the eggplant is tender and slightly golden. This step helps to remove excess moisture, resulting in a chewier texture.
Step 3
While the eggplant is baking, finely chop the cherry tomatoes and the bell peppers. Aim for a texture that still has a slight bite, rather than a purée. This will add a pleasant textural contrast to the pizza.
Step 4
Now, let’s prepare the delicious topping! In a medium bowl, combine the mozzarella cheese, sliced black olives, and breadcrumbs. Mix everything together thoroughly with a spatula or spoon. This mixture will form the flavorful topping for your pizza. The breadcrumbs help the cheese melt beautifully and add a delightful crispness.
Step 5
Remove the baked eggplant from the oven and let it cool slightly. Generously spread the prepared cheese topping evenly over the eggplant slices. Return the pizza to the oven, preheated to 180°C (350°F), and bake for about 15 minutes, or until the cheese is melted, bubbly, and golden brown. Keep an eye on it, as oven temperatures can vary.
