Main Ingredients
  • 2 Tortillas
  • 1 bag Mozzarella Cheese (approx. 150g-200g)
  • A handful of Blueberries (optional, or substitute with other fruits/vegetables)

Sauce & Seasonings
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Honey
  • A little Olive Oil (for greasing the tortilla and sautéing garlic)

Cooking Instructions

Step 1

Lightly brush the baking sheet with a thin layer of olive oil. This prevents the tortilla from sticking and helps it crisp up nicely. Place one tortilla onto the prepared sheet.

Step 2

Spread a thin layer of honey over the tortilla. Honey adds a delightful sweetness to the Gorgonzola pizza and acts as a binder for the cheese. Then, sprinkle a small amount of mozzarella cheese, leaving a slight border around the edge. This will help the second tortilla adhere.

Step 3

In a small skillet, heat a little olive oil over low heat. Add the minced garlic and sauté gently. Be careful not to burn the garlic, as it can char quickly. Cook until it just begins to turn a light golden brown, then remove from heat. This process infuses a wonderful aroma and flavor.

Step 4

Place the second tortilla on top of the first one. Spread the sautéed garlic evenly over the top tortilla. Drizzle another thin layer of honey and gently spread it to combine with the garlic. This creates a flavorful base.

Step 5

Now, generously sprinkle the mozzarella cheese all over the pizza! Aim for an even distribution, concentrating more cheese towards the center. The more cheese, the better it melts into a gooey, delicious layer.

Step 6

Scatter the prepared blueberries over the cheese. The fresh burst of blueberries provides a lovely contrast to the rich cheese, cutting through any potential richness and adding a delightful tang. If you don’t have blueberries, you can use halved cherry tomatoes, arugula, or thinly sliced black olives – they all pair wonderfully. Feel free to experiment with your favorite toppings!

Step 7

Preheat your oven to 170°C (340°F) and bake for about 7 minutes. Cooking times may vary depending on your oven, so keep an eye on it until the cheese is melted and golden brown, and the tortilla edges are crisp. For an extra touch of sweetness and flavor, drizzle a little more honey over the pizza just before serving. Enjoy your delicious homemade pizza with a warm drink or a cold beer! ^^
