Let’s make a super simple, spicy, and hearty Yukgaejang using pre-made Galbi-tang! Enjoy the rich, red soup with tender short ribs.

  • 1 pack pre-made Galbi-tang (500-800g)
  • 1 handful bean sprouts (approx. 50g)
  • 1 bunch green onions (mostly white parts)
  • 1 handful oyster mushrooms (or other mushrooms)
  • 1/3 Tbsp minced garlic (approx. 5g)
  • 1.5 Tbsp gochugaru (Korean chili flakes, approx. 15g, adjust to taste)
  • 1/2 Tbsp soy sauce or fish sauce (approx. 8ml, for umami)
  • 1 egg (for a silky egg swirl)

Cooking Instructions

1. First, ensure your pre-made Galbi-tang is completely thawed. Open the pack and pour both the beef ribs and the broth into a ttukbaegi (earthenware pot) or a regular pot. This forms the rich base of your Yukgaejang.

2. Add 1.5 tablespoons of gochugaru (Korean chili flakes) to bring in that signature spicy kick. Feel free to add a little more if you prefer it extra hot.

3. Stir in 1/2 tablespoon of soy sauce or fish sauce to enhance the savory depth of the broth. Taste and add more if needed to reach your desired saltiness.

4. Add 1/3 tablespoon of minced garlic for an aromatic boost and mix everything well.

5. Now, add the prepared mushrooms. While shiitake mushrooms offer the best aroma, oyster mushrooms, enoki, or any other mushrooms you have on hand will work beautifully. Tear or slice the mushrooms into bite-sized pieces before adding them.

6. Trim and wash the green onions, then cut them into finger-length pieces, focusing on the white parts. Add all the cut green onions to the pot. They will lend a refreshing sweetness to the soup as they cook.

7. Finally, add the thoroughly washed bean sprouts. Bean sprouts cook quickly and can become mushy if overcooked, so add them towards the end for a pleasant crunch.

8. Bring the soup to a simmer over medium heat. Let it cook for about 5-7 minutes, or until the green onions have softened nicely. Taste the broth periodically and adjust the seasoning with salt or more soy sauce if necessary.

9. Lightly beat the egg in a small bowl. Gently drizzle the beaten egg in a circular motion over the simmering soup. Once the egg is cooked and forms delicate ribbons, turn off the heat.
