Stock Up Your Freezer: Easy Tteokgalbi Recipe & How to Store Leftovers
A fantastic way to fill your freezer with delicious meals! This recipe makes tender, flavorful Tteokgalbi that’s perfect for both children and adults.
Tteokgalbi Ingredients- 300g ground beef (lean cut)
- 300g ground pork (with some fat)
- 1 cup breadcrumbs
- 4 Tbsp milk (to soak breadcrumbs)
- 1/2 onion (finely minced and squeezed dry)
- 1/2 stalk green onion (white part only, finely minced)
- 1/4 carrot (finely minced)
- 1 Tbsp minced garlic
- 2 Tbsp soy sauce
- 1 Tbsp cooking wine (or mirin)
- 1 Tbsp corn syrup (or honey for sweetness and shine)
- 1 Tbsp sesame oil
- Pinch of black pepper (optional, can omit for babies)
Cooking Instructions
Step 1
First, soak the breadcrumbs. In a bowl, combine 1 cup of breadcrumbs with 4 tablespoons of milk. Mix well and let it sit for a few minutes until the breadcrumbs are soft and moist. This step is key to making the Tteokgalbi extra tender.
Step 2
Prepare the vegetables for added flavor and texture. Finely mince the onion, the white part of the green onion, and the carrot. If you mince the onion and then gently squeeze out excess water with a paper towel, it will prevent the mixture from becoming too watery.
Step 3
In a large mixing bowl, combine the ground beef and ground pork. Add the minced vegetables, the soaked breadcrumbs, minced garlic, soy sauce, cooking wine, corn syrup, sesame oil, and a pinch of pepper (if using). Now, use your hands to mix everything thoroughly until the mixture becomes sticky and well-combined. Knead for about 5-10 minutes to develop a good texture.
Step 4
Once the mixture is well combined and has a good consistency, shape it into small, flattened patties. You can make them bite-sized for children. Place the shaped Tteokgalbi onto a preheated pan.
Step 5
Heat a pan over medium-low heat. Cook the Tteokgalbi for about 3-4 minutes on the first side until golden brown and nicely seared. Carefully flip them over to the other side.
Step 6
Cook the second side until it’s also golden brown, similar to the first side. Then, add about 2-3 tablespoons of water to the pan and immediately cover it with a lid. Reduce the heat to low and let it steam for about 5-7 minutes, or until the Tteokgalbi is cooked through and tender. Enjoy immediately, or let them cool and store in the freezer for later! They reheat wonderfully.
