Ingredients- 1 stalk of green onion
- 2 large eggs
- 210g cooked rice (about 1 bowl)
- 15g butter
- 3g black pepper (approx. 1/2 tsp)
- 1 Tbsp oyster sauce

Step 1
First, prepare 1 stalk of green onion. Wash the white and green parts of the green onion thoroughly, pat them dry, and finely chop them. This will add beautiful color and flavor to your fried rice. The white parts offer a subtle sweetness, while the green parts contribute a fresh aroma.
Step 2
Crack 2 large eggs into a bowl. Whisk them gently with a fork or a whisk until the yolks and whites are well combined. Try not to over-whisk, as this can make the eggs tough. Just ensure they are uniformly blended.
Step 3
Add 210g of warm cooked rice to the beaten eggs. Using a spatula or spoon, gently mix the rice and egg mixture, ensuring each grain of rice is coated with egg. This technique prevents the rice from clumping and creates a wonderfully fluffy fried rice. Coating the rice with egg beforehand helps achieve a tender texture.
Step 4
Heat a pan over medium-low heat with a generous amount of cooking oil. Add the chopped green onions and stir-fry until fragrant and translucent. This process allows the green onion oil to infuse, significantly deepening the flavor of your fried rice. Be careful not to burn the onions.
Step 5
Once the green onions are fragrant, push them to one side of the pan. Add 15g of butter to the cleared space and let it melt. The melting butter will add a rich, nutty aroma, further enhancing the overall flavor profile of the fried rice. Keep an eye on the heat to prevent the butter from burning.
