Simple Fresh Perilla Kimchi
How to Make Mild and Easy Fresh Perilla Kimchi (Kim Jin Ok’s Recipes)
Hello, this is Kim Jin Ok. Perilla leaves are tender and abundant this season. Fresh perilla kimchi is a side dish that’s ready to eat right away. Make just the amount you’ll eat soon, following the video, without needing many ingredients! Ingredients (for 4 servings): 50 perilla leaves, 1/4 onion, 3 stalks of green onion (or 1/2 green onion). 3 Tbsp soy sauce. 3 Tbsp anchovy sauce. 5 Tbsp water. 3 Tbsp red pepper powder. 1/2 Tbsp minced garlic. 1/2 Tbsp oligosaccharide. 1 Tbsp sesame seeds. ***My measurements are based on 1 Tbsp per tablespoon.*** Use ground sesame seeds.
Ingredients- 50 fresh perilla leaves
- 1/4 onion
- 3 stalks of green onion (or 1/2 green onion)
- 3 Tbsp soy sauce
- 3 Tbsp anchovy sauce
- 5 Tbsp water
- 3 Tbsp red pepper powder
- 1/2 Tbsp minced garlic
- 1/2 Tbsp oligosaccharide
- 1 Tbsp sesame seeds
Cooking Instructions
Step 1
1. Thoroughly wash the perilla leaves. First, soak them in lightly salted water or water with a splash of vinegar for about 10 to 15 minutes. This helps to keep the leaves fresh and remove any dirt. After soaking, rinse each leaf under running water. Drain them well in a colander to prevent the kimchi from becoming watery.

2. Finely julienne the 1/4 onion. Thinly slicing the onion will help its sweetness meld into the marinade and reduce its sharpness.

3. Wash and finely chop the 3 stalks of green onion. Alternatively, you can thinly julienne 1/2 of a regular green onion (scallion) if green onions aren’t available. This adds a nice aromatic touch.
Step 4
4. In a large bowl, combine the julienned onion and chopped green onion. Add the soy sauce (3 Tbsp), anchovy sauce (3 Tbsp), water (5 Tbsp), red pepper powder (3 Tbsp), minced garlic (1/2 Tbsp), oligosaccharide (1/2 Tbsp), and sesame seeds (1 Tbsp). Mix everything thoroughly to create the seasoning paste.

5. To assemble the kimchi, spread a small amount of the prepared seasoning paste onto each perilla leaf. Layer the leaves with the paste. This quick and easy method results in delicious fresh perilla kimchi that can be enjoyed immediately or after a short time in the refrigerator. Enjoy the fresh, vibrant flavor of perilla!
