Simple Fish Cake Fried Rice Made with Perilla Leaves Instead of Expensive Eggs
I decorated the fried rice using perilla leaves instead of expensive eggs. The chewy texture of the perilla leaves paired surprisingly well. This recipe offers a unique twist on classic fried rice, using aromatic perilla leaves for a delightful flavor and texture, a great alternative when you want something different and delicious without relying on eggs.
Ingredients
- Cooked rice: 1-2 bowls (prepare warm)
- Fish cakes (Eomuk): 300g or more (generous amount as preferred)
- Onion: 1/2 medium
- Perilla leaves (Kkaennip): 4 leaves
- Sesame oil: to taste
- Cooking oil: to taste
- Ground black pepper: a pinch
- Sesame seeds: a pinch (for garnish)
Soy Sauce Seasoning
- Garlic: 4 cloves (minced)
- Water: 1/2 cup (100ml)
- Sugar: 1 Tbsp
- Soy sauce: 1 Tbsp
- Oyster sauce: 1 Tbsp
- Garlic: 4 cloves (minced)
- Water: 1/2 cup (100ml)
- Sugar: 1 Tbsp
- Soy sauce: 1 Tbsp
- Oyster sauce: 1 Tbsp
Cooking Instructions
Step 1
Slice the fish cakes into bite-sized pieces. You can cut them lengthwise, into squares, or any shape you prefer. Smaller pieces are great for children.
Step 2
Dice the onion similarly to the fish cakes, or slightly smaller, so it integrates well when stir-fried.
Step 3
Wash and thoroughly dry the perilla leaves. Stack them, roll them up tightly, and slice them into thin, long shreds. These will be used as a fresh garnish.
Step 4
Peel and finely mince the garlic cloves for the seasoning sauce. Minced garlic will infuse the sauce with a wonderful aroma.
Step 5
In a bowl, combine the minced garlic, water, sugar, soy sauce, and oyster sauce. Stir well until the sugar is dissolved to create a flavorful seasoning sauce.
Step 6
Heat a pan over medium heat and add a generous amount of cooking oil. Add the sliced fish cakes and onions, and stir-fry until they turn golden brown and the onions become translucent. This process brings out their natural sweetness.
Step 7
Once the fish cakes have a nice color, pour in the prepared seasoning sauce. Sprinkle with black pepper for seasoning, and mix everything together thoroughly until the sauce coats all the ingredients.

When the seasoning is well incorporated, add the warm cooked rice. Use a spatula to gently break up any clumps of rice and stir-fry to prevent sticking or burning. Keep stirring over medium-low heat.
