  • 2 packs Enoki mushrooms (trimmed)
  • 3 fresh eggs
  • A little minced green onion (or chopped scallions)
  • 1 pinch fine salt
  • Cooking oil for pan-frying

Cooking Instructions

First, prepare the enoki mushrooms by trimming them. Cut off the hard, woody bottom part with a knife.

Rinse the trimmed enoki mushrooms lightly under running cold water to remove any dirt or debris. After rinsing, it’s crucial to drain them thoroughly in a colander. Excess moisture can make the pancakes soggy.

In a large bowl, crack the 3 fresh eggs. Add a pinch of fine salt to season. Whisk the eggs until smooth with a whisk, then stir in the finely chopped green onions and set aside.

Add the drained enoki mushrooms to the prepared egg mixture. Gently toss them to coat the mushrooms evenly along their strands, ensuring the egg mixture adheres well. (Note: 3 eggs are sufficient for 2 packs of enoki mushrooms.)

Arrange the egg-coated enoki mushrooms in the pan, trying to maintain their shape and overlap them as little as possible, forming compact clusters. Lightly coat them with more egg mixture if needed, and pan-fry for about 2-3 minutes on each side until golden brown and cooked through. The goal is a beautiful golden color.
