Ingredients- 2 packs Enoki mushrooms (trimmed)
- 3 fresh eggs
- A little minced green onion (or chopped scallions)
- 1 pinch fine salt
- Cooking oil for pan-frying
Cooking Instructions
Step 1
First, prepare the enoki mushrooms by trimming them. Cut off the hard, woody bottom part with a knife.

Rinse the trimmed enoki mushrooms lightly under running cold water to remove any dirt or debris. After rinsing, it’s crucial to drain them thoroughly in a colander. Excess moisture can make the pancakes soggy.
Step 3
In a large bowl, crack the 3 fresh eggs. Add a pinch of fine salt to season. Whisk the eggs until smooth with a whisk, then stir in the finely chopped green onions and set aside.

Add the drained enoki mushrooms to the prepared egg mixture. Gently toss them to coat the mushrooms evenly along their strands, ensuring the egg mixture adheres well. (Note: 3 eggs are sufficient for 2 packs of enoki mushrooms.)
