Simple Egg Sandwich

Whip up a quick and satisfying egg sandwich with ingredients you likely already have! Perfect for a speedy breakfast or a delightful snack.
Main Ingredients- 8 slices of bread
- Lettuce leaves
- 4 slices of cheese
- 1/2 medium onion, finely chopped
- 4 eggs
- Butter, for cooking
Egg Mayo Sauce- 3 Tbsp mayonnaise
- 3 Tbsp mustard
- 2 Tbsp chopped pickles
- 1/2 tsp lemon juice
- 3 Tbsp mayonnaise

Cooking Instructions
Step 1
First, prepare all your sandwich ingredients. Wash the lettuce leaves and pat them dry. Finely chop the onion. (You can adjust the onion chop size according to your preference.)

Melt a knob of butter in a pan over medium heat. Add the chopped onion, a pinch of salt, and pepper. Sauté the onions until they become translucent.

For a sweeter onion flavor, reduce the heat to low and continue to cook slowly, being careful not to burn them. If you’re making this for children, cook until the onions are very soft. If you enjoy a bit of onion texture, cooking them until they are tender-crisp is also delicious.

Now, let’s make the egg mayo sauce. In a small bowl, combine the mayonnaise and mustard in a 1:1 ratio. Add the finely chopped pickles and about 3-4 drops of lemon juice for a touch of brightness. Stir everything together until well combined.

Prepare the eggs for the sandwich. You can fry them sunny-side up for a runny yolk or cook them to your preferred doneness. Season the eggs lightly with salt and pepper while frying. A sunny-side up egg will add a wonderfully creamy texture when the yolk breaks.
