A Delicious Egg Over Rice Made with Fridge Staples
When grocery shopping feels like a chore in the heat, whip up a satisfying meal using the ever-present eggs in your fridge. This simple and tasty egg over rice recipe is perfect for a quick lunch or a delightful snack for the kids. The chewy texture of imitation crab and king oyster mushrooms, combined with the soft scrambled eggs, creates a hearty and flavorful dish layered over rice.

- 5 pcs imitation crab sticks
- 1 pack king oyster mushrooms
- 4 large eggs
Cooking Instructions
Step 1
First, trim the base of the king oyster mushrooms and rinse them. Cut them in half lengthwise. Tear the imitation crab sticks into bite-sized strips. Place the prepared mushrooms and imitation crab in a bowl.
Step 2
In a separate bowl, crack the 4 eggs and whisk them with 1 tsp of herb salt. Mix well to create the egg mixture. You can substitute regular salt and pepper for herb salt if preferred.
Step 3
Thinly slice the onion. Prepare the green onion by separating the white and green parts. Slice the white parts diagonally, and the green parts diagonally as well, as they will be used as a garnish. Heat a pan over medium heat and add 1 Tbsp of cooking oil. Add the sliced onion and the diagonally cut white parts of the green onion. Sauté until fragrant.
Step 4
Once the onion and green onion begin to turn translucent, pour in 1 cup of the prepared kelp and anchovy broth and bring it to a boil. Boiling the broth will enhance the depth of flavor.
Step 5
When the broth is bubbling evenly, gently pour the prepared egg mixture over the broth. Reduce the heat to medium-low.
Step 6
After pouring the egg mixture, use chopsticks or a spatula to gently stir the mixture, preventing it from sticking to the bottom and breaking it up into large clumps. Stir continuously to create a soft, scrambled egg texture. Avoid over-stirring to maintain a tender consistency.
Step 7
When the eggs are almost fully cooked, add the diagonally sliced green parts of the green onion and give it a gentle mix to combine. Finally, spoon the prepared egg scramble over a bowl of warm rice for a delicious egg over rice. You can also add shredded seaweed or sesame seeds for extra flavor.
