Noodle Soup Ingredients

  • 1 serving of somyeon (thin wheat noodles)
  • 2 eggs
  • About 1/4 onion
  • About 1/10 carrot
  • A small amount of green onion
  • 1 anchovy and kelp stock teabag
  • Fish sauce or soy sauce
  • Salt

Cooking Instructions

Let’s start by preparing a delicious broth. In a pot, combine 600ml of water and 1 anchovy and kelp stock teabag. Simmer for about 5 minutes, then remove the teabag. Season the broth with fish sauce (or soy sauce) and salt to your preference. It’s important to season it mildly, suitable for children.

While the broth is simmering, let’s prep the vegetables. Finely julienne the onion and carrot, and finely chop the green onion. If your children are picky about vegetables, you can slice them very thinly or mince them finely.

Crack 2 eggs into a bowl, remove the chalaza (the white stringy bits), and gently beat them with a fork or whisk until well combined.

Now, slowly drizzle the beaten eggs in a circular motion into the simmering broth, starting from the edges. The key is not to stir the eggs; let them gently cook into ribbons! Once the egg starts to set slightly, add the prepared vegetables (onion, carrot, green onion) and simmer for another short while until the vegetables are tender. Turn off the heat when the vegetables are softened. This completes your delicious egg broth!

In a separate pot, bring plenty of water to a rolling boil. Add the somyeon noodles and cook according to package directions, or for about 30 seconds to 1 minute less than the recommended time for a perfectly chewy texture. Once cooked, rinse the noodles thoroughly under cold running water to remove excess starch. Drain well. Rinsing in cold water makes the noodles springy and even more delicious.

Place the drained somyeon noodles into a serving bowl. Ladle the warm, savory egg broth generously over the noodles. The combination of tender egg and chewy noodles is simply delightful! For an extra flavor boost, you can add shredded seaweed (gim) or finely chopped kimchi.
