Simple Dumpling Soup with Frozen Dumplings

Main Ingredients
- 8 frozen dumplings
- 1/4 onion
- 1 stalk green onion
- 1 red chili pepper
- 2 eggs
Broth Ingredients
- 1 anchovy and kelp broth pack
- 4 cups water
Seasoning Ingredients
- 1 Tbsp minced garlic
- 1 Tbsp soy sauce for soup (guk-ganjang)
- 1 Tbsp fish sauce (or tuna extract)
- Pinch of black pepper
Optional Ingredients (Flavor Boost!)
- 1 handful king oyster mushrooms (or your favorite mushrooms)

- 4 cups water

Cooking Instructions
Step 1
First, prepare the vegetables. Thinly slice the onion. Cut the green onion diagonally into 1cm thick pieces. Remove seeds from the red chili pepper and also slice it diagonally. If using optional mushrooms, slice them similarly.
Step 2
Crack the eggs into a bowl and whisk them thoroughly with a fork or chopsticks until smooth. Whisking them well will result in a clearer broth.
Step 3
In a deep pot, add 4 cups of water and the anchovy and kelp broth pack. Bring to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for about 5 minutes to extract the flavorful broth.
Step 4
Once the broth is ready, remove and discard the broth pack. Add the 8 frozen dumplings, sliced onion, soy sauce for soup, fish sauce (or tuna extract), minced garlic, and pepper to the pot to season. When adding frozen dumplings, make sure to separate them so they don’t clump together.
Step 5
As the dumplings float and start to cook (this takes about 5-7 minutes), add the prepared red chili pepper, green onion, and any optional mushrooms you are using. Adding these vegetables will make the broth more refreshing and richer.
Step 6
Finally, slowly pour the whisked egg mixture in a circular motion around the edges of the pot. Let the egg cook slightly, then once the soup comes to a gentle boil again, turn off the heat and enjoy your delicious manduguk. You can garnish with crumbled seaweed or chopped green onions if desired.
