  • 1 bowl Tteokguk Tteok (rice cakes for soup, approx. 150g)
  • 1 Egg
  • 3 sheets Gim (roasted seasoned seaweed)
  • 1 Tbsp Soy Sauce or Salt (for seasoning)
  • 1 pack Dashi Broth (anchovy and kelp based)

Cooking Instructions

Step 1

Prepare about 1 bowl’s worth of tteokguk tteok (rice cakes specifically for this soup), which is roughly 150g. You can adjust the amount based on your preference.

Step 2

Soak the tteokguk tteok in cold water to soften them. If using frozen rice cakes, soak them for about 1 hour until they become pliable. If using refrigerated rice cakes, you can soak them briefly just before cooking.

Step 3

Preparing the broth is straightforward. Using a store-bought dashi broth pack is very convenient.

Pour about 800ml of water into a pot, add the dashi broth pack, and simmer for 5 minutes to extract a rich flavor. Remove the broth pack, keeping only the clear soup base.

In a separate bowl, crack one egg and whisk it thoroughly with a fork or chopsticks until well combined. Ensure the yolk and white are fully blended.

Step 6

Once the broth is simmering, add the soaked tteokguk tteok to the pot.

After about 1 minute of boiling, gently stir the rice cakes. This prevents them from sticking together and ensures they cook evenly. You’ll know they’re cooking well when they start to float to the surface.

When the rice cakes are halfway cooked and floating, slowly drizzle the whisked egg over the soup. Avoid stirring immediately after adding the egg; let it set slightly until it starts to form ribbons, then gently stir to break it up. Season with soy sauce or salt to taste. You’ve now completed your delicious Tteokguk! Feel free to add chopped scallions or other garnishes if desired.
