First, to enhance the flavor of the gim, we’ll lightly toast it in a dry pan without any oil. Place the gim sheets in the pan and toast for about 10-15 seconds per side, flipping them over. This will remove any fishy smell and bring out a savory aroma. Be careful not to overcook it, as it can burn easily!

Once the gim is toasted, let it cool slightly. Then, place the toasted gim sheets into a clean plastic bag. Now, we’ll crumble the gim into smaller pieces using our hands. By crushing it inside the bag, you can avoid scattering crumbs and keep the process neat. Crumble it to your desired bite-size pieces.

Now it’s time to mix everything with the seasoning! Add 1 tablespoon of soy sauce, 1 teaspoon of oligodang (or corn syrup/honey), 1 teaspoon of sesame oil, and a pinch of sesame seeds to the crumbled gim. If you like, you can also add a tiny bit of chopped green onion for an extra layer of flavor. Gently mix everything with your hands, ensuring the seasoning is evenly distributed. It’s important to handle the gim gently so it doesn’t break apart too much.
