  • Onion, 1/2 medium-sized
  • Carrot, 1/4 medium-sized
  • Zucchini, 1/4 medium-sized

Seasoning & Others

  • Cooking oil (like canola oil), 1-2 Tbsp
  • Salt, a pinch (adjust to your taste)
  • Oyster sauce, 1 Tbsp (adds umami)
  • Curry powder, 1 Tbsp (choose your preferred spice level)
  • Cooked rice, 1 serving (warm rice is best for stir-frying)

Cooking Instructions

First, dice the ham, onion, carrot, and zucchini into small, uniform pieces. Cutting the vegetables small ensures they cook evenly and mix well with the rice, leading to a tastier fried rice.

Heat a wide pan over medium heat and add 1-2 Tbsp of cooking oil. Add the diced ham and vegetables and stir-fry until the vegetables become slightly translucent and the ham releases its fat. Add a tiny pinch of salt to season. (Be mindful that oyster sauce is also salty, so use very little salt.)

Once the vegetables are partially cooked, add 1 serving of warm cooked rice to the pan. Pour in 1 Tbsp of oyster sauce and 1 Tbsp of curry powder. Feel free to adjust the amount of curry powder and oyster sauce according to your personal preference. If you desire a stronger curry flavor, add a bit more curry powder; for enhanced umami, you can add a little more oyster sauce.

Using a spatula or a stir-fry spoon, quickly mix and stir-fry the rice, ingredients, and seasonings until everything is well combined. Gently break up any clumps of rice while stir-frying for about 1-2 minutes, allowing the curry aroma to infuse into all the ingredients. You’ll smell a delicious fragrance!
