Main Ingredients
  • 1 bowl of warm rice (approx. 200g)
  • 1 egg
  • 1/2 stalk of green onion whites (or 1/3 stalk)
  • 1 Tbsp cooking oil

  • 1 Tbsp oyster sauce
  • Pinch of black pepper

Cooking Instructions

Step 1

First, prepare the green onion which will add flavor to your fried rice. Finely chop the white parts of the green onion into about 0.5cm thick pieces. Using the white parts creates a sweeter scallion oil.

Step 2

This is a crucial step for achieving a fluffy texture! Place a bowl of warm rice in a mixing bowl. Crack in one fresh egg. Using a spoon or spatula, gently mix the egg into the rice, coating each grain without mashing the rice. The goal is to have the rice grains separated and evenly coated with egg.

Step 3

Heat a pan over medium-low heat and add 1 tablespoon of cooking oil. Add the chopped green onions and stir-fry until they become translucent and lightly golden, releasing their fragrant aroma. This process creates delicious scallion oil. Be mindful of the heat to prevent burning.

Step 4

Once a pleasant scallion aroma fills the pan, add the rice coated with egg mixture. Increase the heat to medium-high. Using a spatula, gently break up any clumps of rice and stir-fry, separating the grains. Cook just until the egg begins to set, avoiding overcooking to prevent burning.

Step 5

When the rice grains are somewhat separated and the egg is about 70% cooked, pour 1 tablespoon of oyster sauce along the edge of the pan. Stir everything together to evenly distribute the savory oyster sauce throughout the rice. Finish with a pinch of black pepper for extra aroma, and keep the heat on high, stir-frying quickly to combine all ingredients. The fried rice is ready when each grain is glossy.

Step 6

Elevate your dish with beautiful plating, just like Lee Sang-soon! Firmly press the fried rice into a rice bowl to shape it, then invert it onto a wide plate or serving dish. Gently lift the bowl to reveal a perfectly formed, appetizing mound of egg fried rice. You can also garnish with seaweed flakes or shredded egg crepes for an extra touch.
