  • 1/2 cup chopped nuts (walnuts, almonds, cashews, or your preference)
  • 1 pickled cucumber (ojingi, small size)
  • 1/4 carrot (finely diced)

Seasoning

  • 3 Tbsp mayonnaise
  • 1 Tbsp sugar
  • 1 pinch of salt (adjust to taste)

First, prepare two large steamed potatoes. Steamed potatoes are easier to mash when they are still warm. Use a fork or a potato masher to mash them until smooth and lump-free.

Here’s a special twist for this recipe! Instead of fresh cucumber, we’re using pickled cucumber (ojingi). Ojingi adds a wonderful crispiness and a unique savory flavor that makes the salad much more refreshing and delicious. While you can use fresh cucumber, ojingi is highly recommended!

Rinse the pickled cucumber briefly under running water to remove excess salt, then squeeze out as much water as possible. Finely chop it into small pieces. Using chopped ojingi ensures its flavor is evenly distributed throughout the salad.

Add the finely diced carrot and 1/2 cup of chopped nuts to the mashed potatoes. The carrot adds a touch of color, while the nuts provide a satisfying crunch and nutty flavor.
