Main Ingredients

  • Beef (for soup) 50g
  • Korean Radish (Mu) 1/4 (approx. 200-250g)
  • Green Onion 1/2 stalk

Seasoning & Broth Ingredients

  • Water 1200ml (6 cups)
  • Soy Sauce for Soup (Guk-ganjang) 1 tsp
  • Salt 1/2 Tbsp (adjust to taste)
  • Minced Garlic 1/2 Tbsp
  • Black Pepper Powder a pinch (approx. 1/4 tsp)
  • Sesame Oil 1/2 tsp

Cooking Instructions

Step 1

First, wash and peel the Korean radish. Slice it into thin, bite-sized pieces, about 0.3cm thick. Avoid making them too thick, as it will take longer to cook. Wash the green onion and slice it diagonally into 5cm lengths.

If the beef is frozen, make sure to thaw it completely. Cut the thawed beef into thin, rectangular pieces, about 1cm in size. If you’re buying beef specifically for soup, you can use pre-cut strips.

Heat a pot over medium-high heat and add a little sesame oil. Add the prepared beef and stir-fry until it’s lightly browned. Sauté until the surface of the beef starts to cook.

When the beef is halfway cooked, add 1/2 tsp of soy sauce for soup and a pinch of black pepper. Continue to stir-fry until most of the liquid released from the beef has evaporated. This step enhances the beef’s savory flavor.

Once the beef is fully cooked, add the sliced radish to the pot and stir-fry together. Cook until the radish becomes translucent and is about 70% tender. Sautéing the radish beforehand adds more depth of flavor to the soup.

Now, pour 1200ml of water into the pot with the sautéed ingredients. Bring it to a rolling boil over high heat. Skim off any foam that rises to the surface as it boils. This will ensure a clear and clean broth.

Once the soup is boiling vigorously, reduce the heat to medium-low and let it simmer until the radish is completely translucent and tender. When the radish is cooked, add 1/2 Tbsp of salt, 1/2 Tbsp of minced garlic, and the remaining pinch of black pepper to season. Finally, add the sliced green onions and boil for a brief moment over high heat. Your soup is ready!

Once all the seasonings are well combined and integrated into the soup, turn off the heat. Ladle the hot soup into bowls and serve. Enjoy this delicious soup with a bowl of rice!
