Ingredients

  • Canned corn 180g (drained)
  • 1/4 Onion (thinly sliced)
  • 400ml Milk
  • 10g Butter
  • 1 Tbsp Honey
  • 1 tsp Salt
  • 1 Tbsp Cornstarch or All-purpose Flour
  • 1 Tbsp Corn kernels (for garnish)
  • A pinch of Parsley (for garnish)

Cooking Instructions

Step 1

First, drain the canned corn thoroughly and measure out 180g. Thinly slice the onion. Having your ingredients prepped makes the cooking process much smoother.

In a pot with a good depth, melt 10g of butter over medium heat. Once melted, add the sliced onion and sauté for about 2-3 minutes, stirring occasionally, until the onion becomes translucent. Sautéing the onions well brings out their natural sweetness and deepens the flavor.

When the onions are translucent, add the drained canned corn to the pot. Stir and cook together for another minute. This step helps to enhance the sweet aroma of the corn.

Now, pour 400ml of milk into the pot with the sautéed corn and onions. Add 1 tbsp of cornstarch (or flour). Turn off the heat briefly. Use an immersion blender to purée the mixture directly in the pot until smooth, or carefully transfer it to a regular blender and blend until creamy. (Be cautious when using a regular blender with hot liquids, as it can splash.)

Return the puréed soup to the pot over medium-low heat. Stir in 1 tsp of salt and 1 tbsp of honey. Bring the soup to a gentle simmer, then reduce the heat to low. Continue stirring constantly for 3-4 minutes as it simmers to thicken slightly, ensuring it doesn’t boil over. Be careful not to let it get too thick.

Pour the warm, creamy corn soup into serving bowls. For a beautiful presentation, sprinkle about 1 tablespoon of whole corn kernels over the top of each bowl and finish with a light dusting of parsley. Your delicious homemade corn soup is ready to be enjoyed immediately!
