Main Ingredients

  • 150g Macaroni
  • 70g Imitation Crab Meat (Kani)
  • 30g Carrot
  • 60g Green Bell Pepper
  • 40g Asparagus

Dressing Ingredients

  • 7 Tbsp Mayonnaise
  • 2 Tbsp Whole Grain Mustard
  • 1 Tbsp Sugar
  • 1/3 tsp Salt

For Boiling Macaroni

  • 500ml Water
  • 1/2 tsp Salt
  • 1 Tbsp Olive Oil

Cooking Instructions

Step 1

In a pot, bring 500ml of water to a boil with 1/2 tsp salt and 1 Tbsp olive oil. Add 150g of macaroni and cook for about 10 minutes, or a minute or two longer than the package instructions, until it’s tender yet slightly chewy. Once cooked, quickly rinse the macaroni under cold water to remove excess starch, then drain thoroughly in a colander. This step is crucial to prevent a watery salad.

Peel the tough ends off the asparagus. Blanch it in boiling water for about a minute, then finely chop it into small pieces (about 0.5cm). Peel the carrot and julienne it thinly. Cutting the vegetables small ensures they integrate well with the macaroni.

Shred the imitation crab meat along its natural lines for a better texture. Remove the seeds from the green bell pepper and dice it finely. You can substitute with bell pepper for a similar effect. This adds a lovely color and a refreshing crunch.

In a bowl, combine 7 Tbsp mayonnaise, 2 Tbsp whole grain mustard, 1 Tbsp sugar, and 1/3 tsp salt. Whisk well to create the dressing. Whole grain mustard adds a delightful pop and flavor with its visible seeds. Adjust the sugar to your preference for sweetness.

Add the drained macaroni and the finely diced green bell pepper to the dressing bowl. Gently toss to coat. Adding the bell pepper raw provides a crisp texture that brightens up the salad.

Now, add the shredded imitation crab meat, julienned carrots, and blanched, chopped asparagus to the bowl. Mix everything gently until all ingredients are evenly coated with the dressing. Be careful not to overmix, as this can break down the ingredients.

Transfer the beautifully prepared macaroni salad to a serving dish. It’s ready to be enjoyed! Chilling it in the refrigerator before serving enhances its flavor. It’s also fantastic as a sandwich filling or as a side dish to your main meal.
