This recipe is incredibly simple: just make a creamy egg salad with boiled eggs and spread it on toast. Forget those expensive egg sandwiches from bakeries! You can easily make them at home, and they’re perfect for snacks or a satisfying breakfast. It’s not difficult at all, so follow along!

  • 3 fresh eggs
  • 1/2 cucumber

Cooking Instructions

Step 1

First, boil a generous amount of water in a pot. Once boiling, carefully add the eggs. Adding a little salt or vinegar to the water can make peeling the shells easier later. Boil the eggs for about 10 minutes until they are fully cooked (hard-boiled), perfect for making salad.

Step 2

While the eggs are boiling, let’s prepare the cucumber. Wash the cucumber thoroughly and then slice it thinly or cut it into quarters. This will add a refreshing crunch to your sandwich.

Step 3

To the prepared cucumber slices, add a small amount of flower salt (which has a cleaner taste than coarse salt). Gently mix it with your hands, massaging the cucumber slightly to salt it. This process draws out excess moisture, preventing the sandwich from becoming soggy and keeping the cucumber crisp.

Step 4

After salting the cucumber, when the eggs are done boiling, immediately rinse them under cold water to cool them down. Once cooled, gently tap the shells to crack them and then peel them smoothly. While hard-boiled eggs are great, you can also boil them for 8-9 minutes for a slightly softer yolk, creating a ‘Gamdongran’ (a type of soft-boiled egg) texture that’s incredibly delicious!

Step 5

Place the peeled eggs in a bowl. Add 1.5 to 2 tablespoons of mayonnaise, half a teaspoon of sugar, a pinch of salt, and a pinch of black pepper. If the eggs are still warm, you can mash them directly with a spoon; they will blend beautifully without needing to be chopped separately. Mash them thoroughly, ensuring the ingredients are evenly incorporated.

Step 6

As you mash the warm eggs, stir to combine them well with the seasonings. If you prefer not to add the salted cucumber and want a plainer taste, you can add a little more salt at this stage. This alone makes a fantastic egg salad! It’s rich and delicious on its own, but when paired with bread, it transforms into a heavenly egg sandwich. They’re also delicious stuffed into brioche buns or croissants instead of bread slices!

Step 7

Rinse the salted cucumber under running water and then squeeze out as much moisture as possible with your hands before adding it to the egg mixture. It’s crucial to squeeze out the water well to prevent the sandwich from becoming soggy. Taste the cucumber after salting; if it’s too salty, rinsing it is recommended. Prepare it according to your preference!

Step 8

Now, let’s assemble the sandwich. Lay out the two slices of bread.

Spread a generous amount of the creamy egg salad onto the top side of both slices of bread. Ensure there’s enough salad to coat the bread completely.

Step 10

Arrange the squeezed cucumber pieces on top of one slice of bread, then cover it with the other slice. Your delicious egg sandwich is now complete! Isn’t it incredibly simple?
