  • Enoki mushrooms 1/2 pack (approx. 50g)

Cooking Instructions

First, shred the crab sticks along their natural fibers into bite-sized pieces. Trim the base of the enoki mushrooms, rinse them lightly under running water, and then cut them into three equal parts. Finely chop the green onions, preparing them for use.

Pour 800ml of water into a pot and bring it to a boil over high heat. Once the water starts boiling, add 1 chicken stock cube. Stir well until the cube is completely dissolved, creating a flavorful broth.

Once the broth is ready, add the shredded crab sticks and the cut enoki mushrooms. Let them simmer for about 1-2 minutes until the ingredients are cooked through.

As the soup returns to a boil, stir in 1 teaspoon of soup soy sauce to season. It’s best to start with a small amount and adjust the seasoning to your taste rather than making it too salty from the start.

In a separate bowl, crack and whisk the 2 eggs. Slowly drizzle the beaten eggs in a circular motion over the simmering soup. Avoid stirring vigorously immediately after adding the eggs; wait about 10 seconds, then gently stir to create beautiful egg ribbons.

Finally, add the chopped green onions generously and sprinkle a pinch of pepper to enhance the aroma.

In a small bowl, combine 1.5 tablespoons of cornstarch with 3 tablespoons of water and whisk until smooth to create a slurry. Be careful not to overcook, as it can make the soup too thin.
