  • 1 potato (medium-sized)
  • 1 handful of anchovies for broth (gutted)
  • 1 cluster of Oyster mushrooms (or similar

Seasoning & Others

  • 1 Tbsp minced garlic
  • 1 Tbsp anchovy sauce (or soy sauce)
  • 700ml water

Cooking Instructions

Step 1

First, thoroughly wash and peel the potato. Slice it into flat, about 0.5cm thick pieces. Slicing them too thinly might cause them to break down, so aim for a moderate thickness.

Pour 700ml of water into a pot. Add the gutted anchovies for broth. Bring to a boil over high heat. The deep umami flavor extracted from the anchovies is key to the broth’s taste.

Once the water starts boiling, let it simmer for about 1 minute more to fully extract the anchovy flavor. Then, remove and discard the anchovies. Tear the oyster mushrooms (or similar) into small pieces with your hands and add them to the pot. Simmer for about 3 more minutes to infuse the mushroom aroma.

Now it’s time to season. Add 1 tablespoon of minced garlic and 1 tablespoon of anchovy sauce. Stir well. If you don’t have anchovy sauce, soy sauce can be used as a substitute. Taste and adjust seasoning with salt if needed.

Serve the warm potato soup in bowls and enjoy. On this particular day, we steamed some dumplings in a steamer and enjoyed them alongside the soup, which made for a very satisfying and complementary meal. You can also add chopped green onions or chili peppers to your preference.
