Rice Ingredients
  • 2 bowls cooked rice
  • Sushi vinegar (2 Tbsp rice vinegar, 2 Tbsp maple syrup, pinch of salt)
  • 2 Tbsp Macro Teriyaki Sauce solids (see sauce recipe below)

Sautéed Vegetable Ingredients
  • 2 shiitake mushrooms
  • 1/5 carrot
  • 3 slices lotus root
  • 3 cloves garlic
  • 1 cup dashi broth (1 cup water + 1 piece kombu, approx. 5cm x 5cm)
  • 4 Tbsp Macro Teriyaki Sauce (homemade)
  • Pinch of toasted sesame seeds (for garnish)

Tofu Scramble Ingredients
  • 1/4 block firm tofu (approx. 100g)
  • 1 Tbsp olive oil
  • 1 tsp grain syrup (or honey)
  • 1 Tbsp rice vinegar
  • Pinch of salt
  • Pinch of black pepper

Macro Teriyaki Sauce Ingredients
  • 2/3 cup grain syrup (approx. 130g)
  • 2/3 cup sake (approx. 130ml)
  • 1/2 cup mirin (approx. 100ml)
  • 1/2 cup soy sauce (approx. 100ml)
  • 2 Tbsp maple syrup (approx. 30ml)

Cooking Instructions

Step 1

First, prepare the vegetables and garlic. Thinly slice the garlic. Remove the stems from the shiitake mushrooms. Wash and peel the carrot and lotus root. Finely mince all the vegetables. Mincing them finely will help them absorb the seasoning better and create a smoother texture.

Step 2

Make the dashi broth. In a pot, add 1 cup of water and a piece of kombu. Bring it to a boil, and as soon as it starts to boil, remove the kombu to prevent any bitterness. This dashi broth will add a wonderful umami flavor.

Step 3

Let’s make the delicious teriyaki sauce. To the pot with the dashi broth, add sake, mirin, soy sauce, grain syrup, and maple syrup. Stir well to combine. This sauce will be the key to flavoring the sautéed vegetables.

Step 4

Add the prepared vegetables and garlic to the sauce in the pot. Simmer over medium-low heat until the vegetables are tender and the sauce has reduced to a glaze. Stir occasionally to prevent burning. During this process, the natural sweetness of the vegetables will meld beautifully with the rich flavor of the sauce.

Step 5

Now it’s time to make the tofu scramble. Mash the tofu with a fork. Heat olive oil in a non-stick pan over medium heat. Add the mashed tofu and begin to stir-fry. Once some of the moisture from the tofu has evaporated, add the grain syrup, rice vinegar, salt, and pepper. Continue to cook, breaking up the tofu, until all the moisture is gone and the tofu is crumbly and lightly browned. Stirring well will ensure it doesn’t clump.

Step 6

Prepare the sushi vinegar seasoning for the rice. While the rice is still hot, combine the rice vinegar, maple syrup, and salt. Using a rice paddle or spatula, gently fold the seasoning into the rice. Be careful not to mash the rice grains; you want to separate them. Ensure the seasoning is evenly distributed throughout the rice.

Step 7

Strain the homemade Macro Teriyaki Sauce through a fine-mesh sieve to separate the smooth sauce from the solids. This allows for versatile use of the sauce. The strained sauce can be used as a regular soy sauce alternative, and the solids add fantastic flavor to the Chirashi Sushi.

Step 8

Add the solids from the teriyaki sauce to the seasoned sushi rice and mix gently. This will infuse the rice with a subtle teriyaki flavor. Make sure every grain of rice is coated with the delicious sauce.

Step 9

Transfer the prepared sushi rice into serving bowls. Generously top the rice with the prepared tofu scramble. The combination of the seasoned rice and the flavorful tofu scramble is sure to tantalize your taste buds.
