Main Ingredients

  • 2 servings instant ramen noodles
  • 1/2 large green onion or a few scallions
  • 4-6 cloves garlic
  • 1 Tbsp sesame oil (for noodles)
  • Pinch of toasted sesame seeds (for garnish)

Chili Oil Sauce Ingredients

  • 2 Tbsp chili powder (Gochugaru)
  • 1 Tbsp oyster sauce
  • 2 Tbsp soy sauce
  • 1/2 Tbsp sugar
  • 6 Tbsp cooking oil (vegetable or canola)
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds
  • 2 dried chili peppers (peperoncino or similar)

Cooking Instructions

Step 1

First, finely chop the green onion (or scallions) and mince the garlic. Having all your ingredients prepped and ready will make the cooking process much smoother.

Step 1

Step 2

Now, let’s make the flavorful chili oil sauce. In a medium bowl, combine 2 Tbsp chili powder, 1 Tbsp oyster sauce, 2 Tbsp soy sauce, and 1/2 Tbsp sugar. Add 1 Tbsp sesame oil and 1 Tbsp toasted sesame seeds. Crush the 2 dried chili peppers (you can place them in a bag and crush them with a rolling pin or finely chop them with a knife) for a spicy kick. Mix all these ingredients thoroughly until well combined.

Step 2

Step 3

Bring a pot of water to a rolling boil for the ramen noodles. Once boiling, add the 2 servings of instant ramen noodles and cook them for about 30 seconds to 1 minute less than the package instructions suggest. Drain the cooked noodles and rinse them *once* under cold running water to remove excess starch, then drain well. Be careful not to rinse too much, as this can make the noodles mushy.

Step 3

Step 4

In a small saucepan or skillet, add 6 Tbsp of cooking oil. Heat the oil over medium-low heat for about 1 minute. You want the oil to be warm, not smoking hot, to prevent the spices from burning and tasting bitter. Add the chopped green onions (or scallions) and stir-fry until fragrant, infusing the oil with their aroma.

Step 4

Step 5

Reduce the heat to low. Carefully pour the prepared chili oil sauce mixture into the warm oil and green onion. Stir quickly to combine everything. Let it simmer gently for about 1 minute, stirring constantly, to allow the flavors to meld and deepen. Keep the heat low to avoid burning the sauce.

Step 5

Step 6

Finally, add the drained ramen noodles to the saucepan with the chili oil sauce. Toss everything together gently until the noodles are evenly coated with the sauce. Stir-fry for another minute or so to ensure the noodles absorb the delicious flavors. Your homemade Chili Oil Noodles are ready to be enjoyed! Serve immediately while hot. You can garnish with extra toasted sesame seeds or add a fried egg for an even more satisfying meal.
