Basic Ingredients
  • 1 bowl of warm rice
  • 7 frozen chicken nuggets
  • 2 fresh eggs
  • 1/2 medium onion

Special Mayo Sauce & Stir-fry Seasoning
  • 2 Tbsp soy sauce
  • 1 Tbsp mirin (cooking sake)
  • 1 Tbsp oligosaccharide
  • Pinch of black pepper
  • Store-bought tonkatsu sauce (to taste)
  • Mayonnaise (generous amount)
  • Cooking oil (as needed)

Cooking Instructions

Step 1

First, wash and peel half of a medium onion, then slice it thinly into strips. This method helps the onion absorb the sauce well and enhances its flavor.

Step 2

In a small bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of mirin, and 1 tablespoon of oligosaccharide. Mix well to create the special rice bowl sauce. Getting the balance of sweet and savory right is key.

Step 3

Crack 2 eggs into a bowl, add a pinch of black pepper, and whisk gently with a fork until well combined. This helps remove any eggy smell and adds a nice flavor.

Step 4

Heat a little cooking oil in a pan over medium heat and pour in the whisked eggs to make scrambled eggs. Don’t overcook them; turn off the heat while they are still slightly moist for a soft texture when served over rice.

Step 5

In another pan or using an air fryer, cook the chicken nuggets until golden brown and crispy. They should be crispy on the outside and tender on the inside. Using an air fryer is a healthier option as it requires less oil.

Step 6

Add a little cooking oil to a pan over medium-low heat, then add the sliced onions and sauté until translucent. Be careful not to burn the onions; slow cooking will bring out their natural sweetness.

Step 7

Once the onions are well sautéed, pour in the prepared special rice bowl sauce. Stir-fry quickly over low heat until the sauce is well absorbed by the onions. This step infuses the onions with delicious sauce flavor.

Step 8

Cut the cooked chicken nuggets into bite-sized pieces. This makes them easier to eat with the rice and helps them blend well with the sauce.

Step 9

To make a neat drizzle of mayonnaise, place a generous amount of mayonnaise into the corner of a clean disposable plastic bag. Fold the opening several times and secure it tightly with a rubber band. Then, poke a very small hole in the corner with a toothpick. This allows for a delicate, controlled drizzle.

Step 10

Place a bowl of warm rice into your serving dish, then artfully arrange the soft scrambled eggs and the sauce-infused sautéed onions on top. Consider the colors when arranging the toppings for a more appealing presentation.

Step 11

Finally, arrange the bite-sized chicken nuggets attractively over the rice. Drizzle with mayonnaise from your piping bag and a bit of tonkatsu sauce in a zigzag pattern for a visually appealing and delicious chicken mayo rice bowl! Adjust the amount of tonkatsu sauce to your preference.
