What do you usually have for breakfast? Fried rice is a frequent staple in our home because my children always eat it up with gusto, which brings me joy. Today, I’ll show you a super simple recipe to make two delicious flavors of fried rice simultaneously using chicken and shrimp. It’s a quick yet satisfying meal!

Main Ingredients

  • 7 Whiteleg shrimp
  • 1 handful of chicken meat (chicken breast or thigh)
  • 1/2 onion
  • 1 piece carrot (approx. 30g)
  • 1/2 green chili pepper (or bell pepper, paprika)
  • 2 bowls of rice (cold rice recommended)
  • 2 Tbsp grapeseed oil (or cooking oil)

Seasoning

  • 1/2 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

If you’re using pre-cooked roast chicken, carefully remove the meat from the bone and dice it into bite-sized pieces. (If using raw chicken breast or thigh, dice it into bite-sized pieces, season with salt and pepper, and cook in a pan until done before proceeding.)

If using frozen shrimp, thaw them in cold water and pat dry with paper towels. Remove the shells and devein them by making a shallow cut along the back with scissors for a cleaner texture. Cutting slightly along the back with scissors before cooking helps them open up nicely.

Finely dice the onion, carrot, and green chili pepper (or other vegetables of your choice). Finely chopped vegetables contribute to a better texture and integrate well with the rice.

Heat 2 tablespoons of grapeseed oil in a pan over high heat. Add the diced vegetables and stir-fry quickly until they soften slightly, releasing their aroma. Stir-frying over high heat helps maintain the vegetables’ crispness.

Push the stir-fried vegetables to one side of the pan. Add the prepared shrimp to the empty space and stir-fry them together with the vegetables until the shrimp turn pink and are cooked through. This step ensures the flavors meld together.

Spread the stir-fried vegetables and shrimp evenly in the pan. Add two bowls of rice and drizzle 1/2 tablespoon of soy sauce over the top. Gently mix with a spatula, ensuring the rice grains are coated evenly. It’s important for the soy sauce to distribute uniformly throughout the rice.

At this point, you have the ‘Shrimp Fried Rice.’ Once the rice is well mixed, turn off the heat. Drizzle 1 tablespoon of sesame oil and sprinkle 1 tablespoon of toasted sesame seeds, then stir everything together to enhance the aroma.

Separately, divide the fried rice into two portions or remove one portion from the pan. Add the prepared chicken meat to the remaining fried rice in the pan and stir well to combine. Ensure the chicken is thoroughly mixed into the rice.

Plate the finished Chicken Fried Rice. (Since the shrimp shells were removed earlier, it’s ready to eat.)

Chicken fried rice might already have some seasoning from the chicken itself, so taste it and adjust the seasoning with additional soy sauce or salt if needed, according to your preference. Enjoy your two delicious flavors of fried rice!
