It’s designed to be made with whatever you have on hand, ensuring a delicious and satisfying meal for your little one.
Risotto Flavor Enhancers
- 1 pack frozen chicken breast
- 2 heads broccoli
- 2 Tbsp onion (finely minced)
- 2 Tbsp carrot (finely minced)
- 2 Tbsp mushroom (finely minced)
- 1 Tbsp unsalted butter
- 180ml milk
- 1 bowl cooked rice (preferably day-old/cold rice)
- 1 slice baby cheese
- Pinch of salt

Step 1
If you’re watching your diet, you likely have frozen chicken breast! Take out a pack of plain chicken breast (without sauce) and place it in the microwave to defrost. A minute or two should do the trick for a tender result.
Step 2
Once the chicken breast is defrosted and slightly cooled from the microwave, cut it into bite-sized pieces that are easy for your child to eat. Be careful not to cut it while it’s too hot, as it might fall apart.
Step 3
Now, let’s prepare the vegetables that will add wonderful flavor to our risotto. Break the broccoli into small florets. Finely mince the onion, carrot, and mushrooms. About 2 tablespoons of each vegetable should be enough for one serving. Mincing them finely helps ensure your child will eat them without fuss.

Melt 1 tablespoon of butter in a heated pan over low heat. The richness of the butter will add a lovely creaminess to the risotto.

Once the butter is melted, add all the minced vegetables (onion, carrot, mushroom, broccoli) to the pan and sauté over medium heat. Since carrots are a bit firmer, add them first and cook for about 50% of the way before adding the rest of the vegetables. Sauté until the vegetables become slightly translucent and tender.

Add the microwaved chicken breast to the pan and sauté briefly with the vegetables. This allows the chicken to absorb the delicious flavors of the sautéed vegetables.

Now it’s time to add 180ml of milk. For an extra creamy and rich flavor, you can mix 100ml of milk with 80ml of heavy cream. If you don’t have heavy cream, milk alone works perfectly well too!

Once the vegetables are tender, add the bowl of cooked rice and stir everything together until well combined. Gently break up any clumps of rice with your spatula. If the risotto seems too thick, gradually add a little more milk until you reach your desired consistency. It’s best to aim for a slightly looser texture.

Finally, add 1 slice of baby cheese and let it melt into the risotto. The cheese adds depth and a wonderful creaminess. Once the cheese has melted, season very lightly with salt for your baby’s taste. You can skip the pepper for young children.
