Main Ingredients- 150g fresh carrots
Dressing & Seasoning- 1/2 Tbsp coarse salt (sea salt)
- 1/2 Tbsp fresh lemon juice
- 1/2 Tbsp whole grain mustard sauce
- A pinch of black pepper (a few grinds)
- 1/2 Tbsp sugar
- 3 Tbsp olive oil

Cooking Instructions
Step 1
Julienne the carrots into bite-sized strips. For easier and more attractive results, use a vegetable peeler to thinly shave off the carrot skin, then slice it thinly lengthwise before cutting into fine strips. Using a food processor can speed up this process and ensure uniform cuts.
Step 2
Add the 1/2 Tbsp of coarse salt (sea salt) to the julienned carrots. Gently massage the salt into the carrots with your hands for about 10 minutes to draw out some moisture, which helps maintain a crisp texture. Be careful not to over-salt or let the carrots become too soft.
Step 3
After 10 minutes, lightly squeeze out any excess water from the salted carrots. Then, add the remaining dressing ingredients: 1/2 Tbsp lemon juice, 1/2 Tbsp whole grain mustard sauce, a pinch of black pepper, 1/2 Tbsp sugar, and 3 Tbsp olive oil. Gently toss everything together until the carrots are evenly coated with the dressing. Your delicious carrot rapé is ready!
