Main Ingredients
  • 500g well-fermented kimchi
  • 1 can (340g) canned mackerel
  • 2.5 stalks green onions

Cooking Instructions

Step 1

First, prepare the green onions. When you’re in a hurry, roughly chopping them into large pieces is perfectly fine. Chop them coarsely and set aside in a bowl.

Step 2

Now, add the kimchi to the pot. Including about a ladleful of kimchi juice will add even more depth of flavor.

Step 3

Open the can of mackerel and have it ready. Including all the oil from the can will significantly enhance the flavor.

Step 4

Place the canned mackerel on top of the kimchi. Sprinkle 2 tablespoons of gochugaru evenly over the mackerel. This step allows the seasoning to meld into the fish.

Step 5

Cover with a lid and start cooking over medium-high heat. Wait until you hear the stew bubbling vigorously.

Step 6

Once the stew begins to reduce and thicken slightly, add the pre-chopped green onions generously.

Step 7

Sprinkle the remaining 1 tablespoon of gochugaru over the green onions. Cover again with the lid. Now, reduce the heat to medium-low and let it simmer for about 5 minutes, as if letting it steam. This allows the ingredients to soften and the flavors to meld beautifully.

Step 8

Here’s a look at the delicious kimchi stew as it simmers. Just hearing the bubbling sound makes your mouth water, doesn’t it?

Step 9

Transfer the finished canned mackerel kimchi stew to a serving dish. It’s not overly reduced, so it remains nicely moist. You’ll finish a bowl of rice in no time!
