  • Cooking Time : Within 10 minutes

Main Ingredients

  • 2 handfuls thinly shredded cabbage (approx. 200-250g)
  • 2 fresh eggs
  • 1 pinch of sea salt
  • Vegetable oil (like canola or grapeseed) for cooking

Sauce & Toppings

  • 1 Tbsp Mayonnaise (regular or low-calorie)
  • Tonkatsu Sauce (adjust to taste, low-calorie option recommended)
  • Bonito flakes (optional)

Cooking Instructions

Step 1

Prepare about two handfuls of cabbage. Wash it thoroughly and then shred it as thinly as possible. Thinly shredded cabbage will mix better with the egg and create a softer texture when cooked.

Step 1

Step 2

In a large bowl, place the shredded cabbage. Crack in 2 fresh eggs and add a pinch of sea salt to enhance the flavor and balance the taste.

Step 2

Step 3

Using a spoon or whisk, gently mix the cabbage, eggs, and salt until well combined, forming the batter. Be careful not to overmix, as you want to maintain some of the cabbage’s texture.

Step 3

Step 4

Heat about 1 tablespoon of vegetable oil in a non-stick pan over medium heat. Pour all the cabbage batter into the pan and spread it out evenly into a round, flat shape using a spatula. Once the bottom side is lightly golden brown and cooked, carefully flip it over with the spatula and cook the other side until golden brown. Gently press down with the spatula while cooking to ensure it becomes firm and delicious.

Step 4

Step 5

Once the cabbage and egg pancake is golden brown on both sides, carefully transfer it to a plate while still warm. Then, thinly spread 1 tablespoon of mayonnaise evenly over the top surface.

Step 5

Step 6

Next, drizzle Tonkatsu sauce over the mayonnaise in a zigzag pattern or any design you prefer. You can use regular Tonkatsu sauce, but if you’re on a diet, using a low-calorie sauce is a great alternative. A moderate amount of sauce won’t significantly impact your diet!

Step 6

Step 7

Your visually appealing Cabbage Okonomiyaki is now ready! If you like, sprinkle some bonito flakes on top for an extra burst of flavor. This single dish is wonderfully filling, making it a perfect meal replacement. You’ll notice how comfortable your stomach feels the next morning. Enjoy your delicious creation!
