Essential Ingredients

  • 200g beef for soup (leftover from beef and seaweed soup is perfect)
  • 1/2 onion, finely chopped
  • 1/4 carrot, finely chopped
  • 10cm white part of green onion, finely chopped
  • 1-2 bowls of warm cooked rice
  • 1-2 sheets of seasoned seaweed (gim), crumbled

Beef Marinade

  • 1 Tbsp minced garlic
  • 2 Tbsp soy sauce
  • 1/2 Tbsp sugar
  • 1 Tbsp corn syrup or oligo syrup
  • 1 Tbsp sesame oil
  • Pinch of black pepper (optional)
  • 1 Tbsp sesame seeds

Cooking Instructions

First, cut the beef into bite-sized pieces. Place the 200g of beef in a bowl. Add 1 heaped tablespoon of minced garlic, 2 tablespoons of soy sauce, 1/2 tablespoon of sugar, 1 tablespoon of corn syrup, 1 tablespoon of sesame oil, 1 tablespoon of sesame seeds, and a pinch of black pepper. Gently mix everything together with your hands and let it marinate for about 10 minutes. This marination helps remove any gamey smell from the beef and adds a deeper flavor.

Now, let’s prepare the vegetables. Peel the carrot and slice it thinly, then dice it finely. Chopping the vegetables to a similar size as the beef ensures they blend well in the fried rice. Finely chop the white part of the green onion. If you’re using onion, chop it finely, similar to the carrots.

Add the prepared carrots, onion, and chopped green onion to the marinated beef. Gently mix them together again. Incorporating the vegetables directly into the marinade at this stage allows their flavors to meld with the beef beautifully before cooking. Now, get your frying pan ready for the fried rice.

Heat the frying pan over medium-high heat, then add the marinated beef. Stir-fry the beef quickly over high heat, ensuring it doesn’t stick to the pan. As the beef releases its juices, increase the heat slightly to evaporate the moisture. This is key to achieving a non-soggy, fluffy fried rice.

Once the beef is cooked through and most of the moisture has evaporated, add 1-2 bowls of warm cooked rice. Use a spatula to gently press and mix the rice with the beef, ensuring it’s well combined. It’s a good idea to turn off the heat temporarily at this stage. This helps the rice grains remain separate and fluffy as you mix, allowing the beef marinade to coat each grain evenly.

After the rice, beef, and vegetables are evenly mixed, turn the heat back on to medium-high. Stir-fry until the rice grains are becoming distinct and everything is well combined. Finally, crumble in 1-2 sheets of seasoned seaweed (gim). Using two spatulas can help prevent the rice from clumping and ensure all ingredients are thoroughly mixed. Once the seaweed is incorporated and adds a savory aroma, your fried rice is ready! Enjoy it while it’s warm.
