  • 500ml water
  • 1 Tbsp vinegar (for washing eggs)
  • 1 Tbsp salt (for boiling water)
  • 3 Tbsp vinegar (for boiling water)

First, we’ll clean the eggs. Place one dozen eggs in a bowl, add 1 tablespoon of vinegar, and let them soak for about 5-10 minutes. Then, gently rinse them under running water. This helps to remove any impurities from the shell. Crucially, make sure to use only room-temperature eggs for this step. Cold eggs can crack when exposed to heat.

Now, let’s prepare the poaching liquid that will give the baked eggs their unique flavor and texture. In 500ml of water, dissolve 1 tablespoon of salt and 3 tablespoons of vinegar. Don’t worry if they aren’t completely dissolved; a few stirs are sufficient. This mixture helps to strengthen the eggshells, prevent cracking during cooking, and contribute to the signature ‘baked egg’ taste.

Line the bottom of your rice cooker’s inner pot with 2-3 layers of paper towels. This creates a buffer, protecting the eggs from direct contact with the hot pot and ensuring more even heat distribution, which further minimizes the risk of cracking. Carefully arrange the washed eggs in a single layer on top of the paper towels, making sure they don’t bump into each other.

Gently pour the prepared salt and vinegar water over the eggs in the inner pot. The water should just barely cover the eggs. Using too much water might dilute the distinctive baked egg flavor.

Depending on your rice cooker’s settings, it’s recommended to repeat the cooking cycle ‘twice’. For the second cycle, you can add a little more water.
