Key Ingredients- 1 pack (200g) of convenience store rice or leftover cooked rice (approx. 1.5 bowls)
- 3 Tbsp store-bought tomato sauce
- 2/3 paper cup of water (approx. 130ml)
- 2 Shiitake mushrooms
- 5 Cherry tomatoes
- 1/4 Onion
- 5 cloves Garlic
- 2 strips Bacon
- 5g Chicken stock powder (or 1/2 tsp)
- Pinch of black pepper
- Parmesan cheese powder, to taste
- Olive oil, generously
Cooking Instructions
Step 1
Let’s start by preparing the vegetables. Finely mince the onion. Thinly slicing the garlic will add a lovely aroma and texture.

Slice the shiitake mushrooms and cherry tomatoes into bite-sized pieces. Cut the bacon into similar sizes. Prepping all your ingredients like this makes the cooking process much smoother.
Step 3
Heat a generous amount of olive oil in a pan over medium heat. Add the minced onion and sliced garlic. Sauté until the onions become translucent and fragrant. Cooking on low heat prevents the garlic from burning and brings out its full flavor.

Once the onions and garlic are fragrant, add the sliced bacon and cook until it’s nicely browned. The bacon will release its delicious fat, adding extra richness to the dish.

Now, add the shiitake mushrooms and cherry tomatoes to the pan. Season with a pinch of black pepper for enhanced flavor. Sauté until the vegetables are slightly softened.

Once the rice is well stir-fried, add 3 tablespoons of tomato sauce. Mix well with the rice and ingredients, ensuring the sauce coats every grain. Stir-frying helps the sauce integrate beautifully.

When the rice and sauce are well combined, pour in about 2/3 of a paper cup of water (approximately 130ml) and 5g of chicken stock powder (or 1/2 tsp). Stir continuously while simmering over medium heat, then reduce to low heat. The chicken stock will add a wonderful umami depth.

This is the step to achieve the perfect risotto consistency. Once the rice grains are tender and the sauce has thickened to your liking, sprinkle generously with Parmesan cheese powder. Cook for another minute over low heat until the cheese is melted and creamy. This adds a rich finish.
