Simple Avocado Soy-Marinated Pickles
Avocado Pickles ♥ The Flavor is Absolutely Delicious~♬
Calling all avocado lovers! This dish is incredibly delicious when mixed with a fried egg and seaweed flakes over rice. It’s a delightful treat for everyone. Enjoy this easy-to-make avocado pickle recipe that you can enjoy for days! (From ‘All Recipes of the World’, ‘Man-Gae Recipe’)
Essential Ingredients- 2 ripe avocados
- 1/2 handful bonito flakes (approx. 2-3g)
Marinating Sauce Ingredients- 1 paper cup soy sauce (approx. 180ml) (use regular or brewed)
- 1 paper cup water (approx. 180ml)
- 1/2 paper cup sugar (approx. 90g)
- 2 tablespoons mirin or cooking sake (approx. 30ml)
- 1/2 onion (sliced)
- 1 large leek (cut into large pieces)
- 3 cloves garlic (smashed with the side of a knife)
- 10 dried shrimp (heads and guts removed)
Optional Additions- 1 bowl of warm rice
- 1 fried egg
- A little shredded roasted seaweed
- A little sesame seeds

Cooking Instructions
Step 1
Wash the avocados thoroughly under running water, then remove the pit and peel. Slice them thinly into bite-sized pieces (about 1cm thick). Handle them gently as they are soft.
Step 2
Combine all the marinating sauce ingredients in a pot. Add soy sauce, water, sugar, mirin, the sliced onion, leek, smashed garlic cloves, and dried shrimp. Prepare to bring to a boil over high heat.
Step 3
Once the sauce mixture in the pot begins to boil, reduce the heat to medium-low and simmer for another 2-3 minutes to allow the flavors to meld. Let the vegetables infuse their taste into the sauce.
Step 4
Turn off the heat, and add the prepared bonito flakes to the sauce. Cover the pot or leave it uncovered and let it cool down slightly as the bonito flakes infuse their umami flavor. (It doesn’t need to cool completely.)
Step 5
While the sauce is still warm, place the sliced avocados into a sterilized airtight container. Pour the slightly cooled marinating sauce over the avocados, ensuring they are submerged. Seal the container and store it in the refrigerator. The pickles will be ready to enjoy after 1-2 days as the flavors meld beautifully. Serve with warm rice, a fried egg, shredded seaweed, and sesame seeds for a delicious meal!
