Simple Arugula Tortilla Pizza
Party-Perfect Arugula Tortilla Pizza with Arugula Pesto & Honey-Glazed Black Olives
An incredibly easy homemade arugula tortilla pizza, perfect for quick snacks or parties.
Ingredients
- 2 Tortillas
- 2-3 Tbsp Tomato Sauce
- 2-3 Tbsp Arugula Pesto
- 2 Tbsp Honey-Glazed Black Olives (or plain black olives with a drizzle of honey)
- 1/4 Onion, thinly sliced
- 6-7 Cherry Tomatoes, halved
- 2/3 cup Mozzarella Cheese (approx. 60g)
- A handful of Fresh Arugula (approx. 10-15g)
- Balsamic Glaze (or balsamic cream) to taste (optional)
Cooking Instructions
Step 1
First, gently rinse the arugula under cold water and pat it thoroughly dry. Properly draining the arugula is key to preventing a soggy pizza. Have your tomato sauce and arugula pesto ready, and thinly slice the onion after peeling it. Halve the cherry tomatoes as well.

Spread a thin layer of tomato sauce evenly over the first tortilla. About 2-3 tablespoons should suffice; too much can make the pizza overly salty.

Place the second tortilla on top of the first, and then generously spread the arugula pesto over it. The pesto’s fresh, peppery notes will elevate the pizza’s overall flavor.

Using a spoon, dot the honey-glazed black olives over the tortilla, scattering them evenly. If you don’t have honey-glazed olives, you can mix plain pitted black olives with a little honey in a 1:1 ratio. Distribute the sliced onions over the olives. Feel free to add other ingredients you have on hand, such as mushrooms, bell peppers, or corn, for extra flavor and texture!

Generously sprinkle the mozzarella cheese over the arranged toppings. The cheese will melt beautifully, binding all the ingredients together. Arrange the halved cherry tomatoes attractively on top of the cheese.

Now, let’s bake this pizza! Place the pizza in an air fryer preheated to 200°C (400°F) and cook for about 10-12 minutes, or until the cheese is golden brown and bubbly, and the tortilla edges are crispy. If using a conventional oven, bake at 200°C (400°F) for the same duration. Once out of the air fryer, pile a generous amount of fresh arugula on top.
