  • 3 medium potatoes
  • 40g carrot
  • 1 swirl of cooking oil (approx. 1-2 Tbsp)
  • 0.5 tsp salt (adjust to taste)
  • 1 tsp toasted sesame seeds
  • Generous amount of black pepper (to taste)

Begin by preparing 3 medium-sized potatoes. Choosing fresh potatoes is the first step to a delicious stir-fry.

Wash the potatoes thoroughly under running water to remove any dirt. Then, use a peeler to carefully remove the skin. Peeling the potatoes will result in a softer texture.

Slice the peeled potatoes thinly into strips, about 3mm thick. Slicing them not too thick ensures they cook quickly and have a pleasant texture. Also, julienne the 40g of carrot into strips similar in length to the potatoes. About 1/5 the amount of carrot to potatoes is a good ratio for color and flavor.

Place the julienned potatoes in a bowl of cold water for about 10 minutes to remove excess starch. This prevents them from sticking together and results in fluffy stir-fried potatoes. After soaking, drain the potatoes thoroughly in a colander.

It’s important to first stir-fry the drained potatoes in a dry, unheated pan over medium heat to evaporate any remaining moisture. Once most of the water has evaporated, add a swirl of cooking oil (about 1-2 tablespoons) and continue to stir-fry over medium heat until the potatoes become translucent. Be careful not to burn them over high heat at this stage.

As the potatoes start to turn translucent and cook, add the julienned carrots and stir-fry them together with the potatoes. The carrots will add a beautiful color and nutritional boost.
