Ingredients

  • 1/2 block firm tofu
  • 1 Tbsp Doenjang (Korean soybean paste)
  • 1 tsp Gochugaru (Korean chili flakes)
  • 1/4 stalk green onion
  • 1/2 small zucchini
  • 1/2 medium onion
  • 2 king oyster mushrooms
  • 1 package enoki mushrooms
  • 1-2 Korean green chilies (optional)
  • 500ml anchovy broth or water

Cooking Instructions

In a pot, add 1 tablespoon of Doenjang and 100ml of water. Stir well to dissolve the soybean paste completely, ensuring there are no lumps. Then, add the remaining 400ml of water and bring it to a boil over high heat. Once it starts bubbling, your stew base is ready.

As the stew begins to boil, add the prepared zucchini and onion. The zucchini will add a tender texture, while the onion will contribute a natural sweetness, enhancing the overall flavor profile of the stew.
