  • 1 large egg
  • 1 serving of cooked rice (warm rice)
  • A small amount of zucchini (finely minced)
  • A small amount of carrot (finely minced)

Seasonings

  • A pinch of roasted salt
  • A little soy sauce or fish sauce (for added umami)
  • 1 tablespoon sesame oil

Cooking Instructions

Step 1

First, finely mince the zucchini and carrot into very small pieces, suitable for little ones. Place the prepared vegetables into a pot.

Add 1 tablespoon of sesame oil and a tiny pinch of roasted salt to the pot. Turn the heat to low and sauté the vegetables for about 1 minute until they soften slightly and release their aroma.

Once the vegetables are lightly sautéed, add the 1 serving of warm cooked rice. Use a spatula to gently break up any clumps of rice and stir-fry for another minute. Sautéing the rice like this makes the porridge even more savory and delicious.

Now, pour in about 500ml of water (approximately 2.5 standard paper cups). Ensure you use enough water so that the rice and vegetables cook thoroughly.

Increase the heat to medium and stir continuously to prevent sticking to the bottom of the pot. Cook until the rice grains are fully softened and the porridge reaches a thick consistency. This should take about 3-5 minutes.

Once the rice grains are well-cooked and the porridge is smooth, reduce the heat to low. Crack 1 egg directly into the pot.

After adding the egg, gently stir with chopsticks or a spatula to break up the egg into soft curds. It’s important to ensure the egg is evenly distributed throughout the porridge and not clumped together.
