Simple and Flavorful Eggplant Sushi

Today, we’re going to make a very simple dish using eggplant: eggplant sushi! ^^ It’s incredibly easy and delicious.
Ingredients- 1 eggplant
- 2 bowls of multi-grain rice
- 1 Tbsp perilla oil (deulireum)
- 1g sea salt (like Bamboo salt)
- 1 Tbsp oyster sauce
- 1 Tbsp soy sauce
- 1 Tbsp agave syrup
- A pinch of black pepper
- A little sea salt for seasoning
Cooking Instructions
Step 1
Wash the eggplant thoroughly. If using organic produce, it’s a good idea to wash it meticulously, perhaps using a calcium powder wash.
Step 2
Trim off the stem of the eggplant and slice it into approximately 1cm thick rounds. Be careful not to slice them too thin, or they might fall apart when cooked.
Step 3
Place two bowls of warm multi-grain rice into a mixing bowl. Add 1 tablespoon of perilla oil and 1g (about 1/5 tsp) of sea salt. Gently mix the rice so it doesn’t become mushy. Let the rice cool down slightly.
Step 4
Now, let’s make the flavorful sauce for the eggplant! Combine 1 tablespoon of organic oyster sauce, 1 tablespoon of soy sauce, and 1 tablespoon of agave syrup. Add a pinch of black pepper for aroma and a little sea salt for final seasoning. Mix everything well. This sweet and savory blend is truly delightful.
Step 5
Line an oven pan with parchment paper and arrange the sliced eggplant on top. Brush the prepared sauce evenly over the surface of each eggplant slice. Bake in a preheated oven at 150°C (300°F) for about 10 minutes, until tender. Watch carefully to prevent burning.
Step 6
While the eggplant is baking, shape the cooled, seasoned rice into small, round patties. They should be about bite-sized. Make sure the rice isn’t too hot, as it could affect the shape of the eggplant.
Step 7
Carefully remove the eggplant from the oven; it should be nicely browned. There will be some juices and sauce released. Gently pick up each cooked eggplant slice, being mindful of the accumulated liquid, and place it on top of a prepared rice patty. They look quite appealing.
