Main Bowl Ingredients

  • 1 can (300g) tuna, drained very well
  • 4 eggs
  • 1/2 onion, thinly sliced
  • Mayonnaise, to taste (generous amount)

Sweet and Savory Caramelized Onions

  • 2 Tbsp water
  • 3 Tbsp soy sauce
  • 1 Tbsp cooking sake (or mirin)
  • 1 Tbsp oligosaccharide (or sugar)
  • Pinch of black pepper

Creamy Tuna Mayo Sauce

  • 3 Tbsp mayonnaise
  • 0.5 Tbsp sugar
  • 0.5 Tbsp vinegar
  • Pinch of black pepper

Cooking Instructions

First, drain the oil from the canned tuna thoroughly by pressing it gently over a sieve. Peel the onion and slice it thinly. In a small bowl, combine the soy sauce, cooking sake, oligosaccharide, water, and pepper to make the onion glaze mixture in advance.

In a bowl, add the drained tuna and all the ingredients for the tuna mayo sauce (3 Tbsp mayonnaise, 0.5 Tbsp sugar, 0.5 Tbsp vinegar, pinch of black pepper). Gently mix with a spoon until combined. Be careful not to mash the tuna; mixing it lightly is key.

Heat a pan over medium heat. Add the thinly sliced onions and sauté until they become translucent. Cooking the onions until they sweeten is recommended.

Once the onions are translucent, pour in the pre-made onion glaze mixture. Reduce the heat to low and simmer until the onions are tender and the sauce has reduced to a syrupy consistency. Stir occasionally to prevent the sauce from burning.
