Main Ingredients

  • 1 can of tuna (drained)
  • 1 medium onion
  • 4 eggs
  • 1 handful of kimchi (finely chopped)
  • 5-7 perilla leaves (thinly shredded)
  • 2 bowls of warm rice

Seasoning Ingredients

  • 4 Tbsp soy sauce
  • 3 Tbsp sugar
  • 4 Tbsp water
  • 1 Tbsp mayonnaise (for mixing with tuna)
  • Pinch of black pepper (for mixing with tuna)

Cooking Instructions

Step 1

First, prepare one onion by washing it thoroughly and slicing it thinly. In a pan, combine 2 Tbsp soy sauce, 1.5 Tbsp sugar, and 2 Tbsp water. Once it starts to boil, add the sliced onions and stir-fry over medium-low heat until the onions become translucent and tender. Be careful not to burn the seasoning.

Transfer the stir-fried onions to a separate bowl. In the same pan, add the remaining seasoning (2 Tbsp soy sauce, 1.5 Tbsp sugar, 2 Tbsp water) and whisk well. Crack in the 4 eggs and gently scramble them with chopsticks until soft. Once cooked, turn off the heat and set aside.

Wash the kimchi, drain it well, and chop it into bite-sized pieces. Heat a pan and stir-fry the chopped kimchi until it becomes slightly dry and fragrant, preparing the stir-fried kimchi. If the kimchi is too sour, you can add a little extra sugar.

Wash the fresh perilla leaves clean, pat them dry, and then shred them very thinly. Drain the oil completely from the canned tuna. In a bowl, place the drained tuna and mix it with 1 Tbsp mayonnaise, 1 Tbsp sugar, and a pinch of black pepper, gently mashing with a fork until well combined.

Now all the ingredients are ready! Nicely place 2 bowls of warm rice in a serving dish. Arrange the soft scrambled eggs around the rice. Then, layer the stir-fried kimchi, the thinly shredded perilla leaves, and the sweet stir-fried onions on top of the rice. Finally, generously spoon the prepared tuna mayo mixture in the center. Your delicious tuna mayo rice bowl is complete! Mix everything together and enjoy!
