Essential Ingredients

  • 1/2 Onion (approx. 50g)
  • 1 can (100g) Tuna (drained)
  • 2 Tbsp Mayonnaise
  • Plenty of Cooking Oil
  • 1 serving Warm Cooked Rice
  • 1 Egg

Sweet and Savory Soy Sauce Glaze

  • 4 Tbsp Soy Sauce
  • 2 Tbsp Oligosaccharide (or corn syrup)
  • 5 Tbsp Water

Cooking Instructions

Step 1

First, prepare half an onion. Peel the onion, wash it thoroughly, and then slice it thinly or mince it into small pieces so it mixes well in the rice bowl. This way, it will absorb the sauce better and have a softer texture.

Step 1

Step 2

For the tuna, drain the oil completely using a sieve. This step is crucial to prevent the tuna mayo from being greasy and to ensure a clean, savory taste. Once drained, place the tuna in a bowl and mix it with 2 tablespoons of mayonnaise until well combined. This creates your creamy and nutty tuna mayo filling.

Step 2

Step 3

Now, let’s make the scrambled eggs. Heat a pan over medium heat and add a generous amount of cooking oil. Crack in one egg and stir it with chopsticks or a spatula as it cooks, forming soft curds. It’s best to cook it until it’s just set and still slightly moist.

Step 3

Step 4

In a small pot or pan, combine 4 tablespoons of soy sauce, 2 tablespoons of oligosaccharide, and 5 tablespoons of water. Mix them well. This mixture will be simmered down to create our soy sauce glaze. The sweet and savory flavor will perfectly complement the rice and tuna mayo.

Step 4

Step 5

Once the soy sauce mixture begins to simmer, add the prepared onion slices to the pan. Cook over medium-low heat, stirring occasionally, until the sauce has thickened and most of the liquid has evaporated. This will create a delicious caramelized onion topping, bringing out the sweetness of the onion and the umami of the soy sauce.

Step 5

Step 6

Finally, place a serving of warm rice in a bowl. Artfully arrange the prepared tuna mayo, the sweet and savory sautéed onions, and the soft scrambled eggs in distinct lines on top of the rice. And there you have it – a simple yet incredibly delicious tuna mayo rice bowl! For an extra touch, you can sprinkle some shredded seaweed or sesame seeds on top. Enjoy your meal!
