- 200g burdock root
- 2 Tbsp perilla oil (or vegetable oil)
- 1 Tbsp soy sauce
- 1 Tbsp sugar

Step 1
To make delicious stir-fried burdock root, first wash the burdock root thoroughly. Peel the skin thinly using a peeler or a knife. Then, julienne it into very fine strands. Using a mandoline slicer will help you cut it evenly and thinly, which shortens the cooking time and allows the seasonings to penetrate better.
Step 2
Heat a pan over medium-low heat. Add the julienned burdock root and 2 tablespoons of perilla oil. Stir-fry until the burdock root softens and turns a light golden brown, about 5-7 minutes. Perilla oil adds a wonderful nutty aroma that complements the burdock, but you can substitute it with regular vegetable oil if needed.
Step 3
Once the burdock root is tender and has a nice golden hue, it’s time to add the savory element. Pour 1 tablespoon of soy sauce evenly into the pan. Continue to stir-fry, allowing the soy sauce to coat the burdock root, deepening its flavor.
Step 4
Finally, add 1 tablespoon of sugar to bring in a touch of sweetness. Mix everything well and continue to stir-fry until the sugar dissolves and the burdock root becomes glossy and appetizing.
