Main Ingredients

  • Pork shoulder 500g
  • Cabbage 150g (about 1/4 head)
  • Onion 1/2 medium
  • Green onion 1 stalk
  • Korean chili pepper 2
  • Red chili pepper 1
  • Ginger 2g (about thumbnail size)
  • Cooking oil, a little

Pork Marinade

  • Soy sauce 2 Tbsp
  • Fish sauce 1 Tbsp (or anchovy sauce)
  • Minced garlic 0.5 Tbsp
  • Brown sugar 1 Tbsp
  • Corn syrup 1 Tbsp (for shine and sweetness)

Finishing Seasoning

  • Sesame oil 0.5 Tbsp
  • Black pepper, a pinch
  • Sesame seeds, a pinch

Cooking Instructions

Step 1

Wash and prepare all ingredients for a delicious stir-fry. Fresh vegetables will enhance the flavor.

Coarsely shred the cabbage and slice the onion into half-moons. Slice the green onions, Korean chili peppers, and red chili peppers diagonally. Finely mince or shred the ginger. Cutting the vegetables slightly larger than bite-sized will give a better texture when stir-fried.

Pat the pork shoulder dry with paper towels to remove excess blood. This helps reduce any gamey odor. In a bowl, combine the pork with 2 Tbsp soy sauce, 1 Tbsp fish sauce, 0.5 Tbsp minced garlic, 1 Tbsp brown sugar, and 1 Tbsp corn syrup. Gently mix with your hands until the marinade coats the meat evenly. Let it marinate for about 10 minutes to allow the flavors to penetrate the pork.

Heat a wide pan over medium heat and add a little cooking oil. Add the shredded ginger and green onions. Stir-fry for about 10 seconds until fragrant. Be careful not to burn them.

Add the marinated pork shoulder to the pan and stir-fry over high heat for about 5 minutes. Use chopsticks or a spatula to separate the meat as it cooks, ensuring even cooking. Continue stir-frying until the surface of the pork is cooked.

Once the pork is partially cooked, add the sliced onions and stir-fry together. Cook until the onions become translucent and their sweetness is released.

Next, add the shredded cabbage and stir-fry until it softens and wilts.

Finally, add the diagonally sliced Korean and red chili peppers and stir-fry over high heat for about 3 more minutes. The key is to maintain a slight crispness in the vegetables, and the added spiciness makes the dish even more delicious.
