Kimchi Ingredients- 3 bunches of fresh scallions
- 1/2 crisp carrot

- 200ml apple juice for tartness
- 6 Tbsp sugar for sweetness

Cooking Instructions
Step 1
First, trim the 3 bunches of scallions. Remove any yellow or wilted leaves and thoroughly clean off any dirt attached to the roots.
Step 2
Wash the scallions thoroughly under running water about 4-5 times. Ensure all dirt is removed, then drain them well in a colander. Incomplete draining can lead to diluted kimchi flavor, so be mindful.
Step 3
Pour anchovy sauce generously over the root ends of the drained scallions to lightly pickle them. This process wilts the scallions and seasons them from the base, resulting in more flavorful kimchi.
Step 4
Wash the carrot, peel it, and then julienne it thinly. This will add a pleasant texture to the kimchi.
Step 5
After about 15 minutes of pickling the scallions in anchovy sauce, gently toss them to ensure the seasoning is evenly distributed.
Step 6
While the scallions are pickling for a total of about 30 minutes, after the second 15-minute interval, push the scallions to one side of the bowl. We will make the delicious seasoning in the space created.

Add all the seasoning ingredients (red chili flakes, plum extract, apple juice, sugar, ginger powder) to the space cleared by moving the scallions, and mix them together to create the seasoning paste. Taste the scallions pickled in anchovy sauce as you make the paste to adjust the seasoning.

Taste the prepared seasoning paste and adjust the seasoning by adding more anchovy sauce or sugar, according to your preference. Achieving a balance between sweet and pungent flavors is key.
Step 9
Take a handful of the pickled scallions and apply the prepared seasoning paste evenly from the roots to the tips. Fold the seasoned scallions in half and layer them neatly into your kimchi container.
Step 10
Once all the scallions are in the container, let the kimchi ferment at room temperature for about a day before refrigerating. If you prefer to eat it fermented sooner, you can leave it at room temperature for an additional half day. Enjoy your delicious, well-fermented scallion kimchi!
